I Miss My Dad


Four years ago my dad died. I'm making his chili for the first time today. It has taken me too long to get to this point, where I can make his chili and it will be more good memories than painful goodbyes. I am finally at the point where I can read his recipe and think, "Dad, 2# Beans unsoaked is NOT sufficient information. What KIND of beans? And who measures water in POUNDS?" *sigh* I miss you, dad.

I know the grief of losing a parent too soon. My thoughts are with you. (my Mom left a giant cookie recipe that I have trouble making).

My mom does this with her recipes, I'm always sitting there going "What the hell does it mean 'roll when hot and again when cold'? Roll in what? Roll what in what??!?"

I would assume that 1 pint of water is pretty close to 1 pound of water. They must call a pint as 16 fluid ounces for a reasone.

-- and did you know, the older the beans the longer they need to soak? And that different varieties of beans take different soak times for each variety? Except for lentils, overnight seems to work pretty well (at least 10 hours, for me). Be *sure* to drain off the water they soak in, to remove "field dirt" as the bean industry calls it. And use lots more water than beans - beans will soak up water, and swell, and you want them to stay covered.
